Coconut Butter

This recipe is really more of a pantry stocker.  Coconut butter is so easy and affordable to make so I really recommend you do it yourself. As a busy mama these days I am all for a little help from the store but this is one thing I always DIY.

It only takes one ingredient and one kitchen appliance so if you have shredded coconut and a food processor you are good to go.

Coconut butter is rich and decadent and I love using it in recipes because it doesn’t add much sugar. It has a wonderful creamy mouth feel that is good as a spread or an ingredient in desserts, snacks and even some savory dishes.

Coconut is a powerhouse ingredient.  I love to use it because it has a lot of good fats for brain health but also has fiber to help with digestive health.  Coconut is also antibacterial, antifungal, antiviral and antiparasitic!  

My favorite ways to eat it: on toast, drizzled over oatmeal, used in baked goods or in making snack balls and so much more.

Not only is it easy to make, you can store it in your pantry and it will last for months (if you don’t eat it first)!

Coconut Butter

Prep Time 20 minutes
Servings 1 cup

Equipment

  • Food Processor

Ingredients

  • 4 cups shredded coconut unsweetened

Instructions

  • Add shredded coconut to the base of the food processor.
  • Turn on your food processor and let it run for 15 to 20 minutes.  Stopping to scrape down the sides every couple of minutes. 
  • It is done when it becomes a creamy consistency and there are no more flakes. 

Notes

*Does not need refrigeration.  Store in the pantry for up to a few months.
